Shrimp & Grits & Apple pie


Have you had grits before?  It's a southern thing.  They are also known as polenta but we aren't that fancy.  Grits here are white made from hominy and usually slathered in butter.  I make mine with 1/2 milk & 1/2 water and cook them the old fashioned way.  Even though I grew up here in Oklahoma I had never had shrimp and grits until a few weeks ago.  We saw them on Alton Brown (love his show) and had to give them a try.  They were a hit and the boys have been asking for them everyday since.  Tonight I couldn't find my recipe so I had to go off memory.  They turned out pretty good.

Grits:
Old fashioned grits (aka polenta) 1 cup
2 1/2 cups water
2 1/2 cups milk
3 T butter
pinch of salt
Heat milk & water, add grits.  Cook 20 minutes on low stirring often.

Shrimp:
1 lb. medium peeled and deveined shrimp (fresh or frozen)
4 T bacon grease or butter
1 clove garlic, pressed
1 t Cajun seasoning
1 t flour
bacon bits
Melt grease or butter in skillet.  Add garlic and bacon bits.  Stir in shrimp and cook until pink and tender.  Add Cajun seasoning.  If you want to thicken the sauce, sift in flour.  Serve over grits.


And for dessert, Mom's apple pie.  No recipe on this one.  It's a family recipe.  I will never be able to make it like Wayne's mom.  Hers are absolutely the best in the world!  But she has been training me on baking apple pies for 20+ years and I almost have it.  Almost, but not exactly. I can never reach that kind of perfection!  This one was good though, maybe my best yet.  Go out and get yourself some apples.  It is apple pie season!

  2. Yum! I love that the apple pie has apples cut in the crust! (And they probably make it taste waaayy better :) Now I've got a hankering for some apple pie....

  3. Haven't made a pie in a loooong time. I'm not bad at Apple Crisp...just out of pie practice and it was something I was going to practice in my out of work time, but since I'm getting back into a job, better kick it into gear!! Baking pies is on my list!
