Apple Juice Jelly

This recipe is a favorite of our son, Jonah.  He's been asking for some.  I have a hard time turning down my boy's food requests especially something as yummy as apple jelly!

So this morning while towels were in the wash and iced coffee was in my cup, I doned my apron and got out the saucepan.  It's so easy.  Virtually, fool proof.  Only 15 minutes and it was done.

Apple Juice Jelly

2 2/3 cups of apple juice
1 package of pectin (1.75oz size)
3 cups of sugar
2 T of Red Hot candies

Combine apple juice & pectin in a large saucepan.  Bring to a hard boil.  Stir in candies and sugar.  Return to a hard rolling boil and boil 2 minutes, stirring constantly.  Remove from heat. Skim off foam.  Pour into hot jars and seal.  Let set out for 24 hours to jell.
Then refrigerate.

Makes 5 half pint jars.

  1. This is similar to what I do. Instead of the candies, I through in a cinnamon stick during the boil part. It is VERY good.

  3. Our family would love this, and it sounds so easy...yay! Quick question...how long will the jars keep in the fridge? Thanks, Mary

  4. I'm really not sure. It has never lasted that long! You can do a water bath with the jars and then you can keep them in your pantry for a long time, probably a year.

  5. Sounds delicioua and it sure looks pretty. Would that be the powdered pectin? not the liquid? Do you freeze, refridgerate or shelf stable? Thanks for the help in advance.
