Fiesta Rice with Grilled Chicken

Quick & easy.
Light and flavorful.
A great summertime meal.


Fiesta Rice
2 T olive oil
1 clove garlic, pressed
1 cup chopped green onions
2 cups chicken broth
2 cups white minute rice
1 small can corn, drained
1 can diced tomatoes with chiles
1 can black beans, rinsed and drained
1 t cumin
1 t salt
1/4 t pepper
1-2 T chopped fresh cilantro
1 T fresh lime juice

Heat oil in large saucepan.  Add garlic and onions and cook until tender.  Add chicken broth and bring to a boil.  Stir in rice and rest of ingredients except cilantro and lime.  Cover. Remove from heat and let sit for 10-15 minutes.  Top with cilantro and lime.  Grill chicken while fiesta rice is resting.  Call your family and let them be amazed at how fast you can stir up a great summertime meal!
