Oven Fried Chicken


Is there anything more southern than Fried Chicken?
I don't think so.
Ok, maybe sweet tea but fried chicken takes second.


After raising and harvesting our own meat chickens, 
I knew I HAD to learn to make good fried chicken.


My mom-in-law cooked a few of our birds with an old recipe she had.
This one came out of a cookbook that I believe she got when she was first married.


Melt 1/4 cup of butter & 1/4 cup shortening in an oblong 13x9 pan.

Butter & shortening, oh my!
Ladies back then knew how to cook.


Season chicken with salt & pepper.
Then toss in a bag with 1 1/2 cups flour.  Shake to coat.


Place chicken skin side down in butter & shortening.


Bake for 25-30 minutes at 425 degrees.
Turn skin side up.  Bake another 25-30 minutes.


That's it!
This oven fried chicken is so easy, crispy and tasty!


Serve with sweet tea, of course.

  4. Howdy! Saw your recipe this morning and decided I'd try it out for dinner tonight. I used one & a half of our rabbits (+ 2 pcs of chicken) and it was pretty good! For a side, I made mashed carrots & rutabagas. Thank you for sharing your recipe! It was simple & easy to make. ~Lauren :)

  6. Yum! I made this oven fried chicken tonight and my 10 year old daughter was very hesitant when she saw it going into the oven. Everyone had seconds and we're all feeling very content right now. Thanks for sharing this recipe ...too bad we didn't have any sweet tea!

  8. Thank you very much for a great recipe; I used all butter and chicken fillets as that is what I had to hand, simple, easy to do, and delicious! I served it with salad, rice and a vegetable medley. Would have been tasty cold with the salad and some ranch dressing tomorrow, however even though I cooked extra, it was all eaten.
