4,2,1,2 Biscuits

A new biscuit recipe.  I like it so much better!  They are lighter and fluffier than my other recipe.  I'll still use that one for pancakes though.  They are the best homemade pancakes I've ever had.


And why 4,2,1,2?  To make it easy to remember.

4 cups flour
2 tablespoons baking powder (yes I said tablespoons not teaspoons)
1 stick of butter (a little more if you want)
2 cups of milk
add a dash of salt and your ready to roll ~ roll them out that is.

Cut softened butter into flour, baking powder and salt.

Stir in milk adding just enough to make dough stick together.  You may not use all the milk or you may need a little more.  The less you handle the dough the lighter the biscuits will be.  I don't know why but it works.

Get rolling until the dough is about 1/2 inch thick.
Yes, my rolling pin doesn't have handles.  I like it that way.  I know, it's weird!

Cut out.

Put in greased pan.  I turn my oven on and let them rise for 30 minutes over the vent.

Bake for 12 minutes at 425.
This recipe makes 16-18 biscuits.

And add a little butter and homemade strawberry jam.
Yum!

    They look lovely. and because 1 stick of butter is 4oz for us (we don't have 'sticks'!), then the recipe would be 4242.... sounds good :)

  2. We would call those 'biscuits' are called 'scones' over here in Australia...and what we call 'biscuits', you would call 'cookies'! Just a bit confusing. Our scones are usually served smaller than yours and are broken open and left in halves with the filling on top not closed like sandwiches. Isn't it funny how different cultures do things differently with the same ingredients.

But please remember...I am not home schooling or doing all of the other busy things that a young Mom has to do.....so, no, you are in no way a bad chicken mama!! We all have our priorities. My kids are all raised and self sufficient, so now I raise my chickens!!! HA!

  4. Ohhhh, they look so good! Nothing finer than a warm biscuit with jam!
    I don't do biscuits (except out of a can)! My boys laughed when I tried! They used to stay with a lady who made the very best, very lightest biscuits. She tried to teach me, too. But, it didn't take! My biscuits are like rocks! (Yeah, I've been told it's because I handle the dough too much... but I really tried not to!)
    Is that milk straight out of the carton.... or straight out of the cow?!

  7. You make some lovely biscuits. Usually my way is fast and easy called "pick up and go" but maybe one day I'll get around to homemade. I love the red farm house. I know you all have loads of fun. Farm life is "hard work", never dull and always interesting. Debi

    Love this recipe..I sure messed up my grandmas 100 yr old buttermilk biscuit recipe this morning..I added wheat flour and I ran out of shortening and used butter...man they were so heavy...lol

    Somethings just need to be the same ole same ole..lol
